Sometimes the function needs something a little extra. The music may not be hitting like it should, and the people may not be letting loose like they should. The vibes in general may just not be it. Some may say the function needs that little extra bit of energy to really turn the outing into a fun time. Now, being dependent on alcohol to have a good time is never a good thing, but there is a reason why another name for it is "spirit". It brings the party to life! What was once a group of timid and bashful group of people becomes a free flowing social gathering. Humanity likes alcohol because it is a social lubricant, lessening anxiety and reducing stress, allowing that person to be social without fear. It promotes interaction and makes festive atmospheres that much more enjoyable. This is why alcohol vendors at these functions have a responsibility to manage said atmosphere and ensure people have a responsible good time. We don't know what the average person has to deal with, and a chance to have a night out may not be a common occurrence for them. 

Alcohol vendors, despite their main goal of selling alcohol can also be a seen as a deterrent for irresponsible actions. As we know, alcohol can be a dangerous substance, but many people risk it anyway. Water bottles filled with liquor, mini shooters, even pre-games may all be irresponsibly handled in attempts to arrive already ready to party. However, without the services of a dedicated designated driver, this is a risk that poses too much of a danger. Alcohol vendors exist so that this issue gets somewhat taken care of. Selling alcohol at the venue eliminates the need to drive drunk or the need to bring your own alcohol, which depending on the circumstances can be dangerous as well. Getting pulled over with open bottles is a hefty punishment, and getting pulled over for drunk driving is the epitome of irresponsibility. 

Alcohol vendors may seem unimportant until you think about how important it is for people to have alcohol at these functions. Think about how many weddings or venues people have been invited to with the "dry event" in big letters above the invitation. Think about the responses to that. No one should need alcohol to have fun, but it does make it easier. May as well do so while keeping people as safe and responsible as they can.
